Copycat Samoas

This sweet treat is significantly more nutritious than treats made with refined sugar and oils. Plus it contains fiber, vitamins and minerals, which sugar and fat laden sweet treats do not provide.

Ingredients

  • 10 very large, soft and moist medjool dates, pitted
  • 10 tbsp UNSWEETENED coconut shreds
  • Enjoy Life (or other vegan brand) chocolate chips, melted

Method

  1. Microwave the dates for 7-10 seconds until warm to the touch and a bit softer than they were.
  2. Add the dates and unsweetened coconut shreds to the work bowl of a small food processor and pulse several times, then process until the mixture appears crumbly. The mixture should stick together when pressed together between your fingers.
  3. Using a 1 tbsp scoop (I use a small ice cream scoop) divide the mixture into 12 even balls. Press each ball between the palms of your hand to gently flatten, then place on sheet or plate lined with wax paper.
  4. Using the end of a silicone spoon or spatula press a well into the center of each cookie, either partially or all the way, your choice.
  5. Turn the cookies over and using a small silicone basting brush, brush the bottom of each cookie with a thin layer of melted chocolate. Place in the fridge or freezer chocolate side up until the cookies are completely cool and the chocolate is set.
  6. Flip the cookies over and drizzle the tops with melted chocolate. Store in the fridge.
