Jackfruit Pulled Pork & Bacon Bits
Ingredients
- 1 can young/green jackfruit packed in water or brine
- 2 tsp onion powder
- 1 tsp mushroom powder (optional)
- 2 tbsp nutritional yeast
- 1 tsp teriyaki balsamic vinegar (or sub vegan Worcestershire sauce)
- 2 tsp liquid smoke
- 3 tbsp maple syrup
- 1/4 cup coconut aminos
Method
- Squeeze each piece of jackfruit to firmly to release excess liquid
- Place the jackfruit and remaining ingredients to the bowl of a small food processor. Pulse until the jackfruit is shredded and no large pieces remain.Spread on parchment lined baking sheet and convention bake @ 325 degrees, tossing with a fork every 20 minutes until desired doneness is achieved: longer for crunchy bacon bits, shorter for meati pulled pork texture.
- Remove baking tray; spread jackfruit on bottom of air fryer basket; air-fry @ 400 degrees, stirring every 10 minutes until desired product/doneness is achieved: longer for crunchy bacon bits, shorter for meati pulled pork texture.
