Inspired by Kale Cafe located in Daytona Beach

Ingredients

  • 1 large bunch kale of choice, washed and de-stemmed
  • 1 ripe Haas avocado
  • 1 tbsp chickpea miso, OR white (soy) miso if not allergic/sensitive
  • Nutritional yeast, 1-2 tbsp
  • Balsamic condimenti, generous drizzle
  • Garlic powder, 1-2 tsp
  • Onion powder, 1 tsp
  • Red pepper flakes to taste — optional
  • Berries of choice for a pop of sweetness and color — optional

Method

  1. Place all ingredients EXCEPT berries in a large bowl and massage with gloved hands until well combined until the kale is tenter and the volume is reduced by about half.
  2. Plate, top with berries. Serve immediately.
